Wassail

A delicious recipe for Wassail, with apple juice, oranges, lemons, lime, cloves, allspice, cinnamon, water and sugar. Also lists similar drink recipes.

Ingredients:
1 gal apple juice
2 oranges
2 lemons
1 lime
1 tbsp cloves
1 tbsp allspice
2 cinnamon sticks
1 qt water
1 cup sugar

Method:
1. Heat the water to boiling. Cut the lemons and oranges (and lime if using) in half and squeeze the juice into a separate bowl to save, throw the skins and pulp into the boiling water. Add spices and simmer for one hour.

2. Remove the cinnamon sticks, a few cloves, allspice and save to one side. Using a slotted spoon or strainer remove the citrus peels and pulp and the remaining spices. Return the cinnamon sticks and saved spices to the water. Add the apple juice or cider and return to heat.

3. When boiling remove from heat and add the citrus juice and sugar. Simmer very lightly for another 10 minutes and serve. Delicious!

Ingredients:
1 gal apple cider
8 cinnamon sticks
1 washed, sliced lemon
1 washed, sliced orange
1 tbsp cloves
1 tbsp allspice
1 gal white wine
2 cups rum

Method:
Simmer the nonalcoholic ingredients together for 1-2 hours, then add the wine and rum about 10 minutes before serving (hot).

Hot Spiced Cider #2

Ingredients:
2 qt apple cider
1/4 cup sugar
12 cloves
6 allspice
4 3-inch cinnamon sticks

Method:
Combine the cider, sugar and spices in a large saucepan. Heat slowly to boiling. Boil for 3-5 minutes, remove spices, and serve hot. Garnish with orange slices, lemon slices, or rings of unpared red apple with whole cloves forced through peel. 16 servings. If desired, chill spiced cider and serve over ice cubes made from apple juice.

Hot Spiced Cider

Method:
Add allspice, clove and cinnamon stick to the apple cider and let simmer for 1 hour (or longer). This may not look like much spice, but it really does make a pleasantly spicey cider.

Ingredients:
8 cups apple cider
1/2 cup packed brown sugar
1 ground nutmeg
6 inches cinnamon sticks
1 tsp allspice
1 tsp cloves
8 thin oranges slices
8 cloves

Method:
Combine apple cider/juice, brown sugar, and nutmeg in a large saucepan. Place cinnamon, allspice, and cloves in a cheesecloth and tie. Add to cider mixture, and bring to the boil. Reduce heat, cover and simmer for 10 minutes. Remove spice bag and discard. Serve mixture in mugs with a clove-studded orange wedge in each.

Hot Buttered Cranberry Punch

16 oz jellied cranberry juice
1/3 cup firmly packed brown sugar
1/4 tsp ground cinnamon
1/4 tsp ground allspice
1/8 tsp ground cloves
1/8 tsp ground nutmeg
1/8 tsp salt
2 cups water
2 cups unsweetened pineapple juice
butter

Method:
Crush cranberry sauce with a fork. Mix with sugar, spices and salt. Add water and pineapple juice. Cover and simmer 2 hours. Ladle into mugs and float a pat of butter in each serving.

Tom and Jerry Punch

Ingredients:
3 seperated eggs
3 tbsp powdered sugar
1/2 tsp ground allspice
1/2 tsp ground cinnamon
1/2 tsp ground cloves
brandy
dark rum
hot coffee
grated nutmeg

Method:
Beat egg whites to a stiff froth. Separately beat egg yolks until light in color, gradually add the powdered sugar and spices.

Fold yolk mixture into whites. Divide mixture between four 8 oz. mugs. Add 1/2 shot brandy and 1 shot rum to each mug, fill with hot beverage(coffee, can also try water or milk). Stir well and top with nutmeg.

Fall Spice Cordial

A delicious recipe for Fall Spice Cordial, with brown sugar, sugar, apple juice, vanilla extract, cinnamon, ginger, nutmeg, cloves, allspice, orange, brandy and vodka. Also lists similar drink recipes.

Ingredients:
1/2 cup light brown sugar
1/2 cup white sugar
2 1/4 cups apple juice
1 tsp real vanilla extract
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp ground allspice
1/2 tsp dried, chopped orange peel
1 cup white brandy
1/2 cup 100 proof vodka

Method:
Bring brown sugar, white sugar and apple juice to a boil over medium-high heat. Add cinnamon, ginger, nutmeg, cloves, allspice and orange peel. Boil for 4 minutes and remove from heat. Let stand until just warm. Transfer to a clean 1 qt aging vessel. Add vanilla, brandy and vodka. Cover tightly and let stand for 1-4 weeks. Filter out solids before bottling.
